If you’ve wandered through your garden and spotted a curly, bright green shoot snaking up from your garlic plants—congrats, you’ve just met a garlic scape. These whimsical stems are more than just garden eye candy—they’re the secret ingredient your pesto didn’t know it needed.

🌱 What is a Garlic Scape?

Garlic scapes are the flowering stems that grow from hardneck garlic varieties. Gardeners usually snip them off in early summer so the plant puts more energy into growing a big, robust garlic bulb underground.

But here’s the secret: those scapes are edible—and absolutely delicious.

Here’s one of my favorite ways to celebrate scape season: a bold, green pesto that wakes up any dish.

Scapey Pesto recipe

🥣 Ingredients:

  • 1 cup garlic scapes, chopped (about 6–8)

  • 1/2 cup fresh basil (optional, but lovely)

  • 1/2 cup grated Parmesan

  • 1/3 cup extra virgin olive oil (or more to taste)

  • Juice of 1/2 lemon

  • Kosher salt & black pepper to taste

🌀 Directions:

  1. Toss everything in a food processor or blender.

  2. Pulse until smooth, scraping down the sides as needed.

  3. Taste and adjust—add more lemon or oil if needed.

Use it on pasta, sandwiches, eggs, roasted veggies—or just eat it straight off the spoon. No judgment here.
